No doubt, it won’t be really low fat or low carb, but there’s a significant improvement over the conventional version of cheesecake that we often see. Ingredients to Use for Cheesecake Recipe
- Rolled Oats – 1 Cup
- Honey – 2 Tbsp
- Grass-fed Butter (Softened) – 2 Tbsp
- Peanut Butter – 1 Tbsp
- Cinnamon – ½ Tsp
- Salt – Few Pinches
- Vanilla Whey Isolate – 3 Scoops
- Whole Eggs – 2
- Egg Yolk – 1
- Light Cream Cheese – 21 Ounces
- Fat-Free Sour Cream – 5 Ounces
- Strawberries or Raspberries – 1 Cup Zero Calorie Strawberry Syrup or No Sugar Added Strawberry Jelly
Directions to Prepare Cheesecake
- Preheat the oven to 350 degrees Fahrenheit / 180 degrees Celsius.
- With foil or baking paper, line it in the 9-inch springform pan.
- Gently melt the butter, honey, and peanut butter in another pan with low heat.
- Mix the warm syrup with the cinnamon, salt, and oats in a bowl.
- Pour that mixed oat mixture into the springform pan and press it firmly towards the edges.
- Keep it in the freezer to get it set faster while you prepare the filling. In other words, refrigerate for 30 minutes.
- Now, add all the ingredients to the food processor and blend well until creamy and smooth.
- Add the filling mixture onto the firm crumb base. Add half of the raspberries or strawberries, reserving some for topping.
- Bake for approximately 40 minutes. This cheesecake may have a slightly darker appearance compared to a traditional one, so watch for a golden top with a slight wobble remaining. Let it cool completely before topping with jelly and a few additional berries. Optionally, drizzle peanut butter on top. Refrigerate it for a few hours until fully set.
